'It feels good to give back': Sacramento-area native to open Capriotti’s Sandwich Shop in Folsom

The grand opening is Dec. 7 and owner Scott Crouch hopes the shop is the first of four in Sacramento County.

FOLSOM, Calif. — Capriotti’s Sandwich Shop, which opened its first location in Delaware in 1976, will open a location Thursday in Folsom.

The Folsom store, located at 3230 East Bidwell St. #100, will roughly be the sandwich chain’s 200th nationwide, according to owner Scott Crouch.

Crouch, 53, a Rancho Cordova native, says he has a background in finance. He says he likes to “cook crazy things” and always dreamed of jumping into the restaurant business. COVID, however, gave him cold feet.

“I wanted to open a restaurant, but I didn’t have a lot of experience in the restaurant business,” said Crouch. “I started looking at franchise opportunities. I wanted to bring something new and different to Sacramento. Capriotti’s is a lot different.”

He thinks Capriotti’s separates itself from the sandwich shop pack because it puts an emphasis on serving a great sandwich with premium quality products and care for the customer.

Crouch visited and met with the owners at the Capriotti’s in Reno for advice. He says corporate leaders have also been “very helpful” throughout the entire opening process, even helping him select the real estate for new locations.

He says the shop will source its Italian meats from premium vendors. Snake River Farms sources the restaurant's Wagyu beef used in French dips and cheesesteaks.

“I used to live in Folsom and work at Intel,” he said. “Bringing a new brand to Sacramento, it feels good to give back.”

Crouch says he plans on opening three more locations after Folsom: one in the Anatolia neighborhood of Rancho Cordova, one in the Broadway and Land Park area and a third in either Elk Grove or off campus near Sacramento State.

The Folsom store opens Dec. 7 and then it will be open Monday through Saturday from 10 a.m. to 8 p.m. and Sunday from 11 a.m. to 8 p.m.
