Cantina Pedregal set to open in Folsom

Cantina Pedregal is a collaboration between Patricio Wise of Roseville's Nixtaco and Brad Cecchi of East Sacramento's Canon.

FOLSOM, Calif. — Two Michelin-rated chefs are behind a new restaurant scheduled to open in Folsom in January 2024.

Cantina Pedregal will be located on East Bidwell Street next to Mikuni. It's a collaboration between Patricio Wise of Roseville's Nixtaco and Brad Cecchi of East Sacramento's Canon.

The restaurant is named after a subdivision where Wise grew up in Northern Mexico and translated means a field covered by rocks.

"My wife and I grew up in Monterrey, Mexico where cantinas are casual places to spend time with friends and family — where people gather to talk, play games and get to know their neighbors. Drinks are always served along with traditional botanas and other small plates. The ambiance is always warm and convivial and that is the feeling that will carry over into Pedregal," Wise said in a statement to ABC10.

Wise says the menu is still being developed, but visitors can expect fire-roasted ribeye, chicken, octopus and vegetables to share, house-made tortillas, small plates and more.

Pedregal is being built to be a restaurant people want to be, not just eat, according to Wise.

"Pedregal is not just a Mexican restaurant. We’re striving to create a neighborhood gathering place that has an elevated menu and an exciting bar program," Wise said.

Both Canon and Nixtaco earned Michelin Bib Gourmand status, in 2019 and 2021 respectively. This award gave Canon validation of the vision Chef Brad Cecchi and Owner Clay Nutting had when they opened the restaurant. For Nixtaco, Wise said the recognition brought a lot of pride to the staff and they felt honored by the award.

Wise said they chose Folsom for their new restaurant because of the people moving to the area.

"The cantina concept is fairly new to our region — both in design and in the menu — and will be a unique experience for our guests," Wise said.
